In processing, teas are normally fermented. The tea leaves are dried or steamed and left to dry in the sun to undergo the fermentation process. What happens during this time is that the tannins actually increase. Most teas are fermented first, then cut to size afterwards, and what happens when they are cut after fermentation is that the bitter edge of the tea is exposed, the natural seal is interrupted and the tea becomes more bitter. Shangri-La is one of the only teas that cuts the tea before fermentation. The result is a smooth, clean taste of tea without bitterness.
